Abstract
Citrus juice color is an important juice quality criterion. A new colorimeter, ColorFlex[tm], was adapted recently for the determination of orange juice color. In this study we analyzed the relationship between the color numbers measured by ColorFlex[tm], Hunter[tm] D45D2 citrus colorimeter and Macbeth 3100[tm] reflectance spectrophotometers. Color numbers were measured at three juice quality laboratories located in Central Florida. The statistical analyses show a significant correlation in color numbers between ColorFlex[tm], Hunter[tm] D45D2, and Macbeth 3100[tm] colorimeters. However, regression analysis results indicate that color numbers are not equal between the different colorimeters used.
