Ever since the concept that machines can “think” was coined in the 1950s, artificial intelligence (AI) has
evolved in various forms and with increasing capabilities, including the application of AI to public health
issues. Diets and nutrition play a key role in human health and disease. The growing epidemics of chronic
diseases and discovery of discordant disease risks among twins highlight the urgent need of developing
personalized nutrition (PN) over a one-size-for-all strategy to achieve effective interventions. Integration
of AI with individuals’ dietary information, genetics, and physiological data has opened a new window to
develop precision nutrition for disease prevention. In this article, we reviewed the evolution of AI and
PN, discussed the emerging application of AI in PN development, and prospected current challenges.
